A New Chapter in The Wood Norton’s Culinary Story

Fleur de Lys by Glynn Purnell

Following the success of his first project at The Wood Norton, with the Lounge & Terrace Sharing Plates, our Culinary Director, Glynn Purnell, celebrated for his Michelin-starred cooking in Birmingham and his appearances on Great British Menu, now expands his role with the hotel’s signature restaurant, Fleur de Lys.

Known as the “Yummy Brummie” and familiar from Saturday Kitchen and Great British Menu, Glynn has developed a sophisticated new Brasserie Dinner Menu that continues his trademark flair in the heart of Worcestershire.

Open for guests and non-residents all through the year. Advance booking is strongly recommended to avoid disappointment.

Classic Brasserie, Playfully Reimagined

This menu blends the traditions of French brasserie dining with Glynn’s inventive style and love of seasonal produce. French brasserie favourites with Glynn’s inventive style:


● Scallops in squid bouillabaisse with basil 
● Masala monkfish with pickled carrots and red lentils
● Venison with pomme dauphine, bordelaise and smoked bone marrow
● The Egg — Glynn’s award-winning dessert of burnt English custard, blackberries and honeycomb


Designed for leisurely evenings, the Brasserie menu offers a dining experience that feels sophisticated yet relaxed — perfect for Fleur de Lys’ elegant surroundings.

Glynn said of the new Brasserie menu:


“I’m thrilled to launch this new Brasserie menu at The Wood Norton. The dishes take their cue from classic French brasserie style, but each one has my own playful twist — from monkfish with masala spices and braised wreck fish, to scallops in a squid bouillabaisse or baked beetroot with iced goat’s cheese. A few plates may even feel familiar to those who’ve followed me on Great British Menu. It’s a menu full of bold flavours and seasonal produce, designed to feel refined yet relaxed — perfect for a memorable evening in such a beautiful setting.”
